Ingredients

1 pound ground turkey

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 clove garlic, minced

1 large egg

1 teaspoon dried Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup marinara sauce (for serving)

Olive oil (for cooking)

Instructions

Prepare the Zucchini: Begin by thoroughly washing the zucchini under cold water. Using a box grater or food processor, grate the zucchini. Once grated, transfer it to a clean kitchen towel and twist to squeeze out as much excess moisture as you can. This step is crucial to ensure your meatballs maintain the right texture and do not turn out soggy.

Mix Ingredients: In a large mixing bowl, combine the ground turkey, grated zucchini, breadcrumbs, grated Parmesan cheese, parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Using your hands, gently mix the ingredients until they are just incorporated—be mindful not to overmix, as this may result in denser meatballs.

Shape Meatballs: With your hands, take portions of the mixture and form them into meatballs approximately 1.5 inches in diameter. This should yield around 16-18 meatballs, depending on how large you make them.

Heat the Oil: In a large skillet, add a generous splash of olive oil and place the skillet over medium heat, allowing it to warm up.

Cook Meatballs: Once the oil is shimmering, gently add the meatballs to the skillet in a single layer. Let them cook undisturbed for about 6-7 minutes on each side or until they are golden brown and cooked through. If you’re making a large batch, consider cooking the meatballs in smaller batches to prevent overcrowding the pan, ensuring even browning.

Simmer in Marinara: After the meatballs are evenly browned, lower the heat and pour the marinara sauce over them. Cover the skillet and let the meatballs simmer in the sauce for about 5 minutes, allowing them to heat through and absorb the rich flavors of the marinara.

Serve: To serve, arrange the meatballs on a plate with a generous ladle of marinara sauce. Garnish with additional chopped parsley if desired. These savory meatballs are delicious served over a bed of spaghetti, alongside a fresh side salad, or nestled in a sub for a satisfying meatball sandwich.
