Ingredients

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust according to your heat preference)

Salt and pepper, to taste

Juice of 1 lime

8 wooden skewers (soaked in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and finely chopped (optional for added heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Instructions

Prepare the Shrimp Marinade:

In a mixing bowl, combine the olive oil, minced garlic, smoked paprika, ground cumin, cayenne pepper, lime juice, and a pinch of salt and pepper. Whisk these ingredients together until well blended. Add the peeled and deveined shrimp to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and let the shrimp marinate in the refrigerator for at least 30 minutes to absorb the flavors.

      Make the Mango Salsa:

In another bowl, mix together the diced mango, red bell pepper, finely chopped red onion, and jalapeño (if using). Add the chopped cilantro, lime juice, and season with salt and pepper. Gently stir the mixture until everything is evenly combined. Set aside to let the flavors meld while you prepare the skewers.

          Assemble the Skewers:

Preheat your grill to medium-high heat. After soaking, remove the wooden skewers from the water and thread about 4-5 marinated shrimp onto each skewer, leaving a little space between each shrimp for even cooking.

              Grill the Skewers:

Place the shrimp skewers on the preheated grill. Cook for approximately 2-3 minutes on each side, or until the shrimp turn pink and opaque. Keep a close eye on them to prevent overcooking, which can lead to a rubbery texture.

                  Serve:

Once grilled to perfection, carefully remove the skewers from the grill and allow them to rest for about a minute. Serve the skewers warm with a generous scoop of mango salsa alongside to complement the tropical flavors. Enjoy your delicious tropical feast!

                          Presentation Tips:
