1 lb (450g) ground turkey

2 medium sweet potatoes, peeled and diced (approximately 2 cups)

1 red bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon ground cumin

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

1 cup fresh or baby spinach

¼ cup feta cheese, crumbled (optional)

Fresh parsley or cilantro for garnish

Prepare the Ingredients: Start by peeling the sweet potatoes and cutting them into small cubes. Next, dice the red bell pepper and onion, and finely mince the garlic. This will ensure that all ingredients are ready for a smooth cooking process.

    Sauté the Base: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic. Sauté these for about 3-4 minutes, or until the onion turns translucent and fragrant.

      Add Sweet Potatoes: Introduce the diced sweet potatoes to the skillet. Stir occasionally and cook for about 5-7 minutes, until the sweet potatoes begin to soften and turn golden.

        Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula as it cooks. Continue to stir and cook for about 5-7 minutes, or until the turkey is evenly browned and cooked through.
