Ingredients

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 medium onion, finely diced

1 red bell pepper, finely diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with their juices

1 cup chicken broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon lime juice (freshly squeezed)

Fresh cilantro, chopped (for garnish)

Sour cream and shredded cheese (optional, for serving)

Instructions

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the finely diced onion and red bell pepper. Sauté for about 5-7 minutes, or until the vegetables become soft and translucent. Add the minced garlic and cook for an additional minute, until it releases its fragrance.

Brown the Turkey: Add the ground turkey to the pot. Using a spatula, break it up as it cooks, ensuring it is browned and fully cooked through, approximately 6-8 minutes. If needed, drain any excess fat from the pot.

Incorporate Spices: Sprinkle in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Stir well to coat the turkey and vegetables with the spices, cooking for 1-2 minutes to allow the flavors to develop.

Mix in Remaining Ingredients: Add the rinsed black beans, diced tomatoes (along with their juices), and chicken broth to the pot. Stir thoroughly to combine everything evenly.

Simmer the Chili: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and allow it to simmer for 30-35 minutes, stirring occasionally. This step helps the ingredients meld together beautifully.

Taste and Adjust: After simmering, taste the chili and adjust the seasoning as needed with additional salt, pepper, or lime juice for brightness.

Serve: Ladle the steaming chili into bowls, garnishing each with freshly chopped cilantro. If desired, add a dollop of sour cream and a sprinkle of shredded cheese on top for enhanced creaminess and flavor.

Enjoy: Serve the chili hot alongside cornbread or tortilla chips for a complete and satisfying meal!
