Ingredients
  

1 wheel of Brie cheese (approximately 8 ounces)

1 cup unsalted roasted pistachios, shelled and roughly chopped

1/4 cup honey

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 package of puff pastry (2 sheets), thawed

1 egg, beaten (for egg wash)

Fresh cranberries or pomegranate seeds (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

    Prepare the Pistachio Mixture: In a medium mixing bowl, combine the chopped pistachios, honey, finely chopped rosemary, sea salt, and black pepper. Stir the ingredients together until well blended and set aside.

      Roll Out the Puff Pastry: On a lightly floured surface, unroll the thawed sheets of puff pastry. If necessary, gently roll them out with a rolling pin to smooth any creases. Use a sharp knife or pizza cutter to cut each sheet into squares, aiming for dimensions of about 3x3 inches to create small, bite-sized pastries.

        Assemble the Brie Bites: Place a small piece of Brie cheese (approximately 1 ounce) in the center of each puff pastry square. Spoon 1-2 teaspoons of the pistachio mixture on top of each Brie piece, ensuring it is well-covered for maximum flavor.

          Wrap the Brie: Carefully bring the corners of the pastry squares up over the Brie and pistachio topping. Pinch the seams together to securely seal each bite, creating a small pouch.

            Apply Egg Wash: Using a pastry brush, gently coat the tops of the wrapped Brie bites with the beaten egg. This will give them a lovely golden-brown finish when baked.

              Bake the Bites: Place the assembled Brie bites onto the prepared baking sheet, making sure they are spaced apart. Bake in the preheated oven for about 15-20 minutes, or until the pastry is puffed and golden brown.
