Ingredients

1 sheet of puff pastry (thawed)

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

10 oz (280 g) mixed mushrooms, sliced (such as cremini, shiitake, and button)

4 cups fresh spinach, roughly chopped

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup ricotta cheese

½ cup grated Parmesan cheese

1 large egg

1 tablespoon fresh lemon juice

1 tablespoon breadcrumbs (optional for added texture)

Fresh herbs (like parsley or chives) for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking the tart.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, which should take about 5-7 minutes. Stir in the minced garlic and continue to cook for an additional minute, allowing the aroma to release.

Cook the Mushrooms: Next, add the sliced mushrooms to the skillet. Cook for 8-10 minutes or until they have released their moisture and turned a golden brown color. Then, stir in the roughly chopped spinach, dried thyme, salt, and black pepper, cooking until the spinach has wilted, about 3-4 minutes. Once done, remove the skillet from heat and allow the mixture to cool slightly.

Prepare the Filling: In a separate medium bowl, blend together the ricotta cheese, grated Parmesan cheese, egg, and fresh lemon juice until you achieve a smooth consistency. Carefully fold in the cooled mushroom and spinach mixture, ensuring everything is uniformly combined.

Assemble the Tart: On a lightly floured surface, roll out the thawed puff pastry to fit a 9-inch tart pan. Carefully place the pastry into the pan, pressing it gently into the corners. Trim any excess pastry hanging over the edges.

Fill the Tart: Pour the flavorful mushroom and spinach filling into the prepared pastry shell, using a spatula to spread it evenly. If you enjoy a bit of crunch, sprinkle breadcrumbs over the top before baking.

Bake the Tart: Place the tart in your preheated oven and bake for 25-30 minutes or until the pastry is perfectly golden brown and the filling is set.

Cool and Garnish: After baking, allow the tart to cool for a few minutes to make slicing easier. Garnish with fresh herbs of your choice, such as parsley or chives, for added color and flavor.

Serve: Enjoy your savory mushroom and spinach tart warm or at room temperature. It's perfect when paired with a refreshing light salad.
