8 oz (about 2 cups) penne pasta

1 lb Italian sausage (choose mild or hot, casings removed)

2 tablespoons extra-virgin olive oil

3 cloves garlic, finely minced

1 medium onion, diced

1 red bell pepper, diced

1 cup sun-dried tomatoes, chopped (packed in oil)

4 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for heat)

Salt and freshly cracked black pepper, to taste

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a vigorous boil. Add the penne pasta and cook according to the package instructions until al dente, which should take around 10-12 minutes. Once done, drain the pasta and set it aside.

      Brown the Sausage:

        Heat the olive oil in a large skillet over medium heat. When the oil shimmers, add the Italian sausage, breaking it apart with a wooden spoon. Cook for about 6-8 minutes until the sausage is nicely browned and fully cooked. Once ready, transfer the sausage to a plate and set aside.

          Sauté the Vegetables:
