4 cups of fresh spinach leaves, thoroughly washed and dried

2 tablespoons of extra virgin olive oil

2 cloves of garlic, finely minced

1 tablespoon of balsamic vinegar

Salt and freshly ground black pepper, to taste

1/4 teaspoon of red pepper flakes (optional, for added heat)

1 tablespoon of fresh parsley, finely chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Heat the Oil: In a large, heavy-bottomed skillet, pour in the extra virgin olive oil and place over medium heat. Allow the oil to heat until it shimmers gently, indicating it's ready for cooking.

    Sauté Garlic: Once the oil is hot, add the minced garlic to the skillet. Sauté for approximately 30 seconds, stirring continuously, until the garlic becomes fragrant but is not browned—watch closely to avoid burning.

      Cook Mushrooms: Add the sliced mushrooms to the pan in a single layer. Cook for 5-7 minutes, stirring occasionally. You’ll know they’re done when they are nicely browned and tender. Season the mushrooms with a pinch of salt, black pepper, and, if desired, the red pepper flakes for a kick.
