1 ½ cups chocolate cookie crumbs (such as Oreo or similar)

½ cup unsalted butter, melted

2 tablespoons granulated sugar

24 oz (3 packages) cream cheese, softened to room temperature

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup shredded coconut, toasted

½ cup caramel sauce (store-bought or homemade)

½ cup mini chocolate chips

½ cup caramel sauce

¼ cup toasted coconut (for garnish)

¼ cup mini chocolate chips (for garnish)

Prepare the Crust: Begin by preheating your oven to 350°F (175°C). In a medium mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix well until the mixture resembles wet sand. Press this mixture firmly and evenly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes, or until set. Remove from the oven and allow it to cool completely.
