12 oz rigatoni pasta

1 lb Italian sausage (choose between mild or spicy based on your preference)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 can (14 oz) crushed tomatoes

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for sautéing

Preheat the Oven: Set your oven to 375°F (190°C) so it’s ready for baking.

    Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rigatoni and cook according to the package instructions until it is al dente. Once cooked, drain the pasta and set it aside.

      Sauté the Sausage: In a large skillet over medium heat, add a splash of olive oil. Remove the casing from the Italian sausage and crumble it directly into the skillet. Cook the sausage for 5-7 minutes, stirring occasionally, until it is browned. Once cooked, transfer the sausage to a bowl and set aside.

        Cook the Vegetables: In the same skillet, add a touch more olive oil if needed. Introduce the diced onion, minced garlic, and diced red bell pepper. Sauté these ingredients for about 4 minutes until they begin to soften. Next, add the diced zucchini and continue cooking for an additional 3 minutes. Season this mixture with salt, pepper, dried oregano, dried basil, and red pepper flakes if using.
