Roasted Garlic Mashed Cauliflower

1 medium head of cauliflower, cut into florets

1 whole head of garlic

2 tablespoons extra-virgin olive oil

½ cup unsweetened almond milk (or your preferred milk)

3 tablespoons unsalted butter (or vegan butter)

Salt and freshly ground pepper to taste

½ teaspoon onion powder

¼ cup freshly grated Parmesan cheese (optional)

Fresh chives or parsley, chopped, for garnish

Roast the Garlic:

    Preheat your oven to 400°F (200°C). Carefully slice the top off the entire head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and place it in the oven. Roast for about 30-35 minutes until the cloves are soft and beautifully caramelized.

      Prepare the Cauliflower:

        While the garlic is roasting, bring a large pot of salted water to a rolling boil. Add the cauliflower florets and cook for 10-12 minutes, or until they are very tender. Once cooked, drain the cauliflower and set aside to cool slightly.

          Blend the Ingredients:

            After the garlic is done roasting, allow it to cool for a minute. Squeeze the roasted cloves out of their skins directly into a blender or food processor. Add the cooked cauliflower florets, the remaining 1 tablespoon of olive oil, almond milk, butter, onion powder, salt, and pepper. If you’re opting for a richer flavor, add the Parmesan cheese.

              Mash and Adjust Flavor:

                Blend the mixture until it achieves a smooth and creamy consistency. If the mash is thicker than you desire, gradually add more almond milk, one tablespoon at a time, until you reach your preferred texture. Taste the mash and adjust the seasoning with extra salt and freshly ground pepper as needed.
