Roasted Garlic Corn Pizza

1 pizza dough (store-bought or homemade)

2 cups fresh corn kernels (or canned if unavailable)

1 head of garlic

2 tablespoons olive oil

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh arugula for garnish (optional)

Balsamic glaze for drizzling (optional)

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut about ¼ inch off the top of the garlic head to expose the cloves. Place the garlic on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, then wrap it tightly. Roast the garlic in the oven for approximately 30-35 minutes, until the cloves are soft and caramelized. After roasting, let it cool slightly, then squeeze the roasted garlic out of the skins into a small bowl and mash with a fork until smooth.

    Prepare the Corn: In a skillet over medium heat, add the remaining tablespoon of olive oil. Once heated, add the fresh corn kernels and sauté for about 5-7 minutes, stirring occasionally until they are tender and have developed a light golden color. Season with salt and pepper to taste, and then sprinkle in the fresh thyme. Stir to combine and set aside to cool.

      Preheat the Pizza Stone: If you’re using a pizza stone, place it in the oven and preheat to 475°F (245°C). For those without a pizza stone, a baking sheet can be used as a substitute.

        Assemble the Pizza: On a floured surface, gently stretch or roll out the pizza dough into your desired shape, roughly 10-12 inches in diameter. If you have a pizza peel, line it with parchment paper and transfer the dough onto it. Alternatively, place the dough directly onto the prepared baking sheet. Spread the mashed roasted garlic evenly across the surface of the dough, leaving a small border around the edges for the crust.

          Add Cheese and Corn: Evenly dollop the ricotta cheese across the roasted garlic base. Next, distribute the sautéed corn evenly over the top. Follow this by sprinkling the shredded mozzarella and grated Parmesan cheeses. If you enjoy some spice, this is the ideal moment to sprinkle the red pepper flakes over the pizza.

            Bake the Pizza: Carefully slide the pizza onto the preheated pizza stone, or place the baking sheet into the oven. Bake for 12-15 minutes, or until the crust achieves a golden brown color and the cheese is bubbling and slightly browned.
