4 whole wheat pitas

1 cup broccoli florets, steamed

1 head of garlic

3 tablespoons olive oil, divided

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

½ cup feta cheese, crumbled

Salt and pepper, to taste

Fresh basil leaves, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice approximately ¼ inch off the top of the head of garlic to expose the cloves. Drizzle 1 tablespoon of olive oil over the cut surface, sprinkle with a pinch of salt, and wrap the head in aluminum foil, ensuring a tight seal. Place the wrapped garlic in the oven and roast for 30-35 minutes, or until the cloves feel soft when pressed. Allow the garlic to cool for a few minutes, then squeeze the soft, caramelized cloves into a bowl and mash with a fork until smooth.

    Prepare the Pita Base: While the garlic is roasting, arrange the whole wheat pitas on a baking sheet. Using a pastry brush, evenly coat each pita with approximately 1 tablespoon of olive oil. Sprinkle each pita with dried oregano, red pepper flakes if desired, and a light seasoning of salt and pepper for added flavor.

      Assemble the Pizzas: Evenly distribute the roasted garlic mash over each pita, using about 1 tablespoon per pita. Next, scatter the steamed broccoli florets atop the garlic spread, followed by an even distribution of shredded mozzarella cheese and crumbled feta cheese.
