Ingredients
  

2 cups fresh corn kernels (approximately 3-4 ears of corn)

1 ripe avocado, diced into 1-inch pieces

1 medium red onion, finely chopped

1 medium tomato, diced

1 jalapeño, seeds removed and minced (adjust for desired heat level)

1/4 cup fresh cilantro, chopped

Juice of 2 limes (approximately 1/4 cup)

2 tablespoons extra virgin olive oil

Salt and freshly ground black pepper, to taste

1/2 teaspoon smoked paprika (optional)

Instructions
 

Roast the Corn:

    - Begin by preheating your oven to 400°F (200°C).

      - Spread the fresh corn kernels evenly on a large baking sheet. Drizzle with 2 tablespoons of olive oil, and season with a pinch of salt and pepper.
