Ingredients

1 medium head of cauliflower, cut into bite-sized florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: 1/2 cup crumbled feta or cotija cheese

Optional: Hot sauce, to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's perfectly hot for roasting the cauliflower.

Prepare the Cauliflower: In a large mixing bowl, combine the bite-sized cauliflower florets with the olive oil, smoked paprika, ground cumin, garlic powder, onion powder, and a sprinkle of salt and black pepper. Toss the mixture thoroughly to ensure each floret is well coated with the seasoning blend.

Roast the Cauliflower: Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper, allowing space between the pieces for proper roasting. Place the baking sheet in the preheated oven and roast for 25-30 minutes. Halfway through the cooking time, toss the florets to promote even browning and crispiness.

Warm the Tortillas: While the cauliflower is roasting, take a dry skillet and bring it to medium heat. Warm the corn tortillas in the skillet for about 30 seconds on each side until they become soft and pliable. Once warmed, wrap them in a clean kitchen towel to keep them warm.

Assemble the Tacos: After the cauliflower has finished roasting and is golden brown and crispy, take your warm tortillas and layer a generous amount of the roasted cauliflower onto each one. Top with a handful of shredded red cabbage, slices of avocado, and a sprinkle of fresh cilantro.

Garnish and Serve: If desired, sprinkle crumbled feta or cotija cheese over the top of your tacos for added creaminess. Serve the tacos with lime wedges on the side and a dash of hot sauce to give them an extra kick. Enjoy these delightful tacos while warm!
