Ingredients

4 large russet potatoes

2 cups broccoli florets, chopped into bite-sized pieces

1 cup shredded sharp cheddar cheese, plus extra for topping

1/2 cup cream cheese, softened to room temperature

1/4 cup sour cream

1/4 cup milk (add more if necessary for desired consistency)

2 tablespoons olive oil, divided

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon salt, plus more for seasoning

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional, for a kick)

Chopped fresh chives (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the potatoes.

Prepare the Potatoes: Thoroughly scrub each potato under cold running water, then pat them dry with a towel. Using a fork, prick each potato several times to allow steam to escape during baking. Coat the skins with 1 tablespoon of olive oil and a sprinkle of salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are soft and tender when pierced with a fork.

Roast the Broccoli: While the potatoes are baking, prepare the broccoli. In a mixing bowl, toss the chopped broccoli florets with the remaining tablespoon of olive oil, minced garlic, salt, and black pepper. Spread the broccoli onto a baking sheet in a single layer and roast in the oven for 15-20 minutes, until tender and edges are crispy, stirring halfway through for even cooking.

Prepare the Potato Filling: Once the potatoes are fully baked, remove them from the oven and let them cool for a few minutes until they are safe to handle. Carefully slice each potato in half lengthwise. Using a spoon, gently scoop out the insides of the potatoes, leaving about 1/4 inch of potato flesh attached to the skin to maintain the structure.

Make the Filling: In a large mixing bowl, combine the scooped-out potato flesh, softened cream cheese, sour cream, and milk. Add the onion powder, 1/2 teaspoon salt, black pepper, and crushed red pepper flakes (if using). Mash the mixture together until smooth and creamy. Fold in the roasted broccoli and shredded cheddar cheese until everything is evenly blended. If the mixture is too thick, gradually stir in more milk to reach a desired consistency.

Stuff the Potatoes: Lower the oven temperature to 375°F (190°C). Refill the potato skins with the cheesy broccoli filling, mounding it generously on top. Finish by sprinkling additional shredded cheddar cheese over each stuffed potato.

Bake Again: Return the filled potatoes to the oven and bake for an additional 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden.

Serve & Garnish: Once baked, remove the potatoes from the oven and allow them to cool slightly. Before serving, garnish with freshly chopped chives for an added touch of flavor and color. Enjoy your deliciously cheesy roasted broccoli twice-baked potatoes hot out of the oven!
