1 teaspoon freshly grated ginger (optional)

2 cups cooked white or brown rice

1 cup mixed vegetables (such as peas, carrots, and corn)

2 green onions, sliced (for garnish)

Prepare the Chicken Marinade: In a large mixing bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger (if you're using it) until fully blended.
