Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

1/4 cup low sodium soy sauce

1/4 cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

2 cups cooked jasmine or brown rice

1 cup fresh or frozen broccoli florets

1 cup bell peppers, sliced (choose a combination of red, yellow, or green for color)

1/4 cup green onions, chopped (for garnish)

1 teaspoon sesame seeds (optional, for garnish)

Instructions

Marinate the Beef: In a medium-sized mixing bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. Add the sliced flank steak to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and let it marinate for at least 15 minutes in the refrigerator (longer, up to 1 hour, will enhance the flavor).

Cook the Vegetables: Heat a splash of oil in a large skillet or wok over medium heat. Once the oil is shimmering, add the broccoli florets and sliced bell peppers. Stir-fry the vegetables for about 3-5 minutes, or until they are tender but still crisp. Remove the vegetables from the skillet and set aside.

Cook the Beef: In the same skillet, raise the heat to medium-high. Add the marinated beef (reserving any leftover marinade for later). Sear the beef for about 5-7 minutes, stirring occasionally, until it reaches your desired level of doneness. If you retained some marinade, pour it into the skillet during the last minute of cooking to thicken and glaze the beef.

Combine: Once the beef is cooked, return the stir-fried vegetables back to the skillet. Toss everything together gently until well combined and heated through. Taste and adjust the seasoning if necessary.

Serve: Spoon the cooked rice into serving bowls, creating a base. Generously top each bowl with the sweet teriyaki beef and vegetable mixture. Finish by garnishing with chopped green onions and a sprinkle of sesame seeds, if using.

Enjoy! Your Quick Sweet Teriyaki Beef Bowls are now ready to be savored!
