Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach, finely chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened to room temperature

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1 teaspoon dried oregano

2 tablespoons olive oil

1/4 cup grated Parmesan cheese (optional, for extra flavor)

Toothpicks or kitchen twine for securing

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking the chicken.

Prepare the Filling: In a medium mixing bowl, thoroughly combine the chopped spinach, crumbled feta, softened cream cheese, minced garlic, salt, black pepper, and dried oregano. Stir until the mixture is well blended and creamy.

Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch. This step will help your chicken cook uniformly.

Stuff the Chicken: Take a portion of the spinach and feta filling and place it in the center of each chicken breast. Be careful not to overstuff; about 1/4 to 1/3 cup of filling per breast is sufficient. Fold the sides of the chicken over the filling and secure them with toothpicks or tie with kitchen twine to keep the filling intact during cooking.

Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the stuffed chicken breasts. Cook for approximately 4-5 minutes on each side, or until they develop a nice golden-brown crust.

Bake: Transfer the skillet to your preheated oven and bake the stuffed chicken for 20-25 minutes. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C). For extra flavor, sprinkle grated Parmesan cheese over the top during the last 5 minutes of baking.

Rest and Serve: Once the chicken is cooked, remove the skillet from the oven and let the chicken rest for about 5 minutes. This allows the juices to redistribute. Carefully remove the toothpicks or twine, slice each stuffed breast, and serve warm with your favorite side dishes, like a fresh salad or roasted vegetables.

                  - Presentation Tips: For an elegant touch, plate the chicken slices on a bed of mixed greens, drizzling with a balsamic reduction for added flavor and color. A sprinkle of extra feta cheese and a wedge of lemon on the side will enhance the dish’s visual appeal.
