Quick Lemon Garlic Shrimp and Broccoli Skillet

1 pound large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 medium lemon, zested and juiced

3 tablespoons olive oil, divided

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, finely chopped (for garnish)

Cooked rice or quinoa (for serving, optional)

Instructions
 

Prepare the Shrimp: In a medium bowl, combine the peeled shrimp with the lemon zest, lemon juice, red pepper flakes, and a pinch of salt and pepper. Mix well to ensure the shrimp is evenly coated. Allow it to marinate for 10 minutes at room temperature to absorb the flavors.

    Blanch the Broccoli: While the shrimp is marinating, fill a pot with salted water and bring it to a boil. Once boiling, add the broccoli florets and blanch them for 2-3 minutes until they turn a vibrant green and are slightly tender but still crisp. Drain the broccoli and set it aside.

      Sauté Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until it becomes fragrant, being cautious not to let it burn.

        Cook the Shrimp: Increase the heat to medium-high and add the marinated shrimp to the skillet. Cook the shrimp for 2-3 minutes on each side, or until they turn pink and are cooked through. Once done, remove the shrimp from the skillet and set aside.

          Combine Ingredients: In the same skillet that you used for the shrimp, add the blanched broccoli.
