Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and freshly cracked pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 medium tomato, diced

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro leaves, for garnish

For the Avocado Cream Sauce:

1 ripe avocado

½ cup sour cream

Juice of 1 lime

Salt, to taste

Instructions

Prepare the Beef Filling:

In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, approximately 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Beef:

Incorporate the ground beef into the skillet, using a wooden spoon to break it apart. Cook until the beef is fully browned, about 5-7 minutes, stirring occasionally. If there's excess fat, carefully drain it from the pan.

          Season the Beef:

Stir in the chili powder, ground cumin, smoked paprika, and season generously with salt and freshly cracked pepper. Mix thoroughly to ensure the spices coat the beef evenly. Lower the heat and allow everything to simmer for a few minutes while you prepare the avocado cream sauce.

              Make the Avocado Cream Sauce:

In a blender or food processor, add the ripe avocado, sour cream, lime juice, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste and adjust the seasoning to your liking, adding more salt or lime juice if needed.

                  Warm the Tortillas:

In a separate dry skillet over medium heat, warm the tortillas for about 30 seconds on each side, or until they become pliable. Alternatively, you can wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for 10 minutes.

                      Assemble the Tacos:

Place a couple of generous tablespoons of the seasoned beef mixture onto each tortilla. Top with a handful of shredded lettuce, a few diced tomatoes, and a sprinkle of shredded cheese.

                          Drizzle with Avocado Cream Sauce:

Add a generous drizzle of the creamy avocado sauce over the filled tacos. Finish off by garnishing with fresh cilantro leaves for a pop of color and flavor.

                              Serve and Enjoy:

Serve the tacos warm, allowing each person to add their favorite toppings if desired, such as jalapeños or hot sauce. Enjoy this quick and delicious meal with family and friends!
