Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

1 medium red bell pepper, cut into strips

1 medium yellow bell pepper, cut into strips

1 medium green bell pepper, cut into strips

3 cloves garlic, minced

1-inch piece of ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sesame oil

Salt and pepper, to taste

2 green onions, finely chopped (for garnish)

Cooked jasmine rice or noodles (for serving)

Instructions

Marinate the Beef: In a mixing bowl, combine the sliced beef, soy sauce, oyster sauce, cornstarch, and a small pinch of salt and pepper. Using your hands or a spatula, toss the beef to ensure each piece is well-coated in the marinade. Set aside to marinate for 15 minutes while you prepare the vegetables.

Prepare the Vegetables: During the marinating time, rinse the bell peppers under cold water and chop them into thin strips. Mince the garlic and ginger finely, ensuring that the pieces are small enough to release their flavor during cooking.

Heat the Oil: In a large wok or a deep skillet, pour in 2 tablespoons of vegetable oil. Heat over medium-high heat until the oil is shimmering but not smoking, ensuring a good sear on the beef.

Stir-Fry the Beef: Carefully add the marinated beef to the hot skillet in a single layer. Allow it to sear without moving it for about 1-2 minutes, then stir-fry for an additional 1-2 minutes until it is cooked through and lightly browned. Remove the beef from the skillet and place it on a plate, covering it to keep warm.

Sauté the Vegetables: In the same skillet, add an extra tablespoon of vegetable oil if necessary. Add the minced garlic and ginger; sauté for 30 seconds until aromatic. Then, toss in the sliced bell peppers. Stir-fry for about 3-4 minutes, mixing frequently until the peppers are vibrant and tender-crisp.

Combine Everything: Return the cooked beef to the skillet with the sautéed vegetables. Drizzle sesame oil over the mixture and gently stir everything together. Cook for an additional minute to ensure the flavors meld. Taste the stir-fry and adjust the seasoning with additional salt and pepper if needed.

Serve: Remove the skillet from heat and transfer the delightful beef and bell pepper stir-fry to a serving platter. Garnish with finely chopped green onions for a fresh touch. Serve immediately over steaming jasmine rice or noodles for a complete meal.
