1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets, fresh

1 cup bell peppers, thinly sliced (any vibrant color)

2 cloves garlic, minced

1 inch ginger, freshly grated

3 tablespoons soy sauce, divided

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 teaspoon sesame oil

1 cup jasmine rice

2 cups water or beef broth

Salt and pepper, to taste

Optional: sesame seeds and chopped green onions for garnish

Instructions
 

Prep the Beef: Place the thinly sliced beef in a bowl. Add 1 tablespoon of soy sauce, cornstarch, and a pinch of salt. Mix well to coat the beef evenly. Allow it to marinate for about 10 minutes while you chop and prepare the remaining ingredients.

    Cook the Rice: In a medium saucepan, bring 2 cups of water or beef broth to a boil. Add the jasmine rice, stir once, then reduce the heat to low. Cover the saucepan and let it simmer for approximately 15 minutes, or until the rice is tender and has absorbed all the liquid. Once done, remove from heat and fluff the rice with a fork.

      Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. When the oil is shimmering, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until the beef is browned but remains slightly undercooked. Remove the beef from the skillet and set aside on a plate.

        Stir-Fry the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Once hot, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, add the broccoli florets. Stir-fry for 2-3 minutes, until the broccoli is bright green and tender-crisp. Add the sliced bell peppers and continue to stir-fry for an additional 2 minutes until they are slightly softened.

          Combine and Sauce It Up: Return the partially cooked beef to the skillet with the sautéed vegetables. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce, and sesame oil. Stir everything together thoroughly, allowing it to cook for an additional 2-3 minutes, or until the beef is fully cooked and everything is well-coated in the savory sauce.

            Serve: Spoon generous portions of the beef and broccoli stir-fry over the fluffy jasmine rice. For an extra touch, sprinkle with sesame seeds and garnish with chopped green onions if desired.
