1 cup canned pumpkin puree

1/2 cup warm water (approximately 110°F)

2 tablespoons honey or maple syrup

1 tablespoon olive oil

1 teaspoon vanilla extract

2 cups spelt flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup chopped walnuts

Optional: sesame seeds or pumpkin seeds for topping

Prepare the Dough: In a large mixing bowl, whisk together the warm water, honey (or maple syrup), olive oil, and vanilla extract until fully blended and smooth.

    Mix Dry Ingredients: In a separate bowl, combine the spelt flour, baking powder, baking soda, sea salt, ground cinnamon, ground nutmeg, and ground ginger. Whisk together until the mixture is homogenous and airy.

      Combine Wet and Dry: Gradually pour the dry ingredients into the wet mixture. Stir gently until just combined, taking care not to overmix; this will ensure your bread remains tender.

        Incorporate the Pumpkin & Walnuts: Gently fold in the canned pumpkin puree and chopped walnuts into the batter, ensuring they’re evenly distributed throughout the mixture for the best flavor and texture.
