14 oz firm tofu, pressed and cubed

1 cup fresh pineapple chunks (or canned, drained)

1/4 cup soy sauce

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons vegetable oil (for frying)

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Prepare the Tofu: Start by pressing the tofu to eliminate excess moisture. Wrap the tofu block in a clean kitchen towel or paper towels, place a heavy object such as a cast-iron skillet on top, and let it sit for 20-30 minutes. After pressing, cut the tofu into 1-inch squares for even cooking.

    Make the Pineapple Glaze: In a blender or food processor, combine the fresh pineapple chunks, soy sauce, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger. Blend the mixture until completely smooth, ensuring all ingredients are well incorporated.

      Thicken the Glaze: In a small bowl, mix the cornstarch with 2 tablespoons of water to form a slurry. Add this slurry to the blended pineapple mixture and stir well to combine. Transfer the mixture to a saucepan and cook over medium heat for 3-5 minutes, stirring occasionally, until it begins to thicken. Once thickened, remove from heat and set aside for later use.

        Cook the Tofu: Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, add the cubed tofu in a single layer.
