Ingredients

2 cups fresh pineapple, peeled and diced into small chunks

1 medium cucumber, peeled and sliced into thin rounds

4 cups cold water, divided

2 tablespoons fresh lime juice (about 1 lime)

3-4 tablespoons honey or agave syrup (adjust to taste)

A pinch of salt

Fresh mint leaves for garnish (optional)

Lime slices for garnish (optional)

Instructions

Prepare Ingredients: Begin by thoroughly peeling the fresh pineapple and cutting it into small, bite-sized chunks. Likewise, peel the cucumber and slice it into thin rounds for easy blending.

Blend Base: In a blender, combine the chopped pineapple, cucumber slices, and half of the cold water (2 cups). Blend on high speed until the mixture is smooth and creamy, ensuring all pieces are well incorporated.

Strain Mixture: To achieve a silkier texture, pour the blended mixture through a fine-mesh sieve or cheesecloth into a large pitcher. Use a spoon to press down and extract as much liquid as possible, leaving pulp behind (this step is optional, but recommended for a smoother drink).

Mix in Remaining Ingredients: Add the remaining 2 cups of cold water to the pitcher with the strained juice. Stir in the freshly squeezed lime juice, followed by your chosen sweetener (honey or agave syrup) and a pinch of salt. Taste and adjust the sweetness as needed to match your preference.

Chill: For a refreshing experience, refrigerate the agua fresca for at least 30 minutes. This allows the flavors to meld beautifully and cools the drink to perfection.

Serve: Once chilled, pour the agua fresca into glasses filled with ice to keep it frosty. For an elegant touch, garnish each glass with fresh mint leaves and a slice of lime. Enjoy the invigorating flavors of your tropical refreshment!
