1 pound ground turkey

1/2 cup fresh basil pesto

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg, lightly beaten

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cherry tomatoes, halved (for roasting)

Olive oil (for drizzling)

Fresh basil leaves (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Prepare the meatball mixture: In a large mixing bowl, combine the ground turkey with the basil pesto, breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, dried oregano, salt, and black pepper. Use your hands or a wooden spoon to mix the ingredients until just combined—avoid overmixing to ensure a tender texture.

      Form the meatballs: Take about 2 tablespoons of the turkey mixture and roll it into a ball using your hands. Place the formed meatballs onto the prepared baking sheet, leaving about an inch of space between each one. Continue this process until all the mixture is formed into meatballs.

        Add cherry tomatoes: Nestle the halved cherry tomatoes around the meatballs on the baking sheet. Drizzle a light amount of olive oil over both the meatballs and tomatoes for added flavor and to encourage a nice roasting finish.

          Bake: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes. The meatballs are done when they are golden brown on the outside and reach an internal temperature of 165°F (74°C).
