Ingredients

1 lb flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 medium onion, thinly sliced

1 bell pepper (any color), thinly sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Green onions, sliced (for garnish)

Instructions

Marinate the Steak: In a medium bowl, combine the sliced flank steak, soy sauce, and cornstarch. Mix well to ensure the steak is evenly coated. Let it marinate for at least 15 minutes while you prepare the other ingredients.

Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Wait until the oil shimmers, indicating it’s hot enough for cooking.

Cook the Steak: Carefully add the marinated steak to the hot skillet in a single layer. Depending on the size of your skillet, you may need to do this in batches to avoid overcrowding. Sear the steak for about 2-3 minutes per side or until it is nicely browned. Once cooked, remove the steak from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and bell pepper, and stir-fry for approximately 3-5 minutes. You want the vegetables to be tender yet still crisp, maintaining their vibrant color.

Add Aromatics: Introduce the minced garlic and grated ginger to the skillet. Stir continuously for about 30 seconds, allowing the aromatics to infuse the oil and release their flavors.

Combine Ingredients: Return the cooked flank steak to the skillet. Pour in the oyster sauce, hoisin sauce, rice vinegar, and sesame oil. Gently stir everything together until the steak and vegetables are thoroughly coated in the sauce, ensuring an even distribution of flavors.

Simmer: Reduce the heat slightly, allowing the mixture to simmer for an additional 2-3 minutes. This will enable the flavors to meld and the dish to heat through. Taste and season with salt and pepper as desired.

Serve: Scoop generous portions of the pepper steak mixture over a bed of warm, cooked rice or noodles. Garnish your dish with a sprinkling of sliced green onions for a fresh and vibrant finish.
