Ingredients

4 medium ripe pears, peeled, cored, and sliced

2 cups fresh raspberries (frozen raspberries can also be used)

1 cup granulated sugar, divided

2 tablespoons all-purpose flour (for the fruit filling)

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup all-purpose flour (for the cobbler topping)

1 tablespoon baking powder

1/4 cup unsalted butter, melted

1/2 cup whole milk

1 large egg

1 tablespoon brown sugar (for topping)

Ice cream or whipped cream (for serving, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish and set aside.

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced pears and raspberries. Add 1/2 cup of granulated sugar, 2 tablespoons of flour, vanilla extract, lemon juice, ground cinnamon, and salt. Gently toss the ingredients together until the fruit is evenly coated. Allow the mixture to sit for about 10 minutes, giving time for the flavors to meld and the juices to release.

Make the Cobbler Topping: In another mixing bowl, whisk together 1 cup of flour, baking powder, and the remaining 1/2 cup of granulated sugar. In a separate bowl, mix the melted butter, whole milk, and egg until thoroughly combined. Pour the wet mixture into the dry ingredients and stir just until combined, being careful not to overmix – some lumps are okay.

Combine and Bake: Pour the prepared fruit mixture into the greased baking dish, spreading it evenly across the bottom. Using a spoon, dollop the cobbler topping over the fruit, leaving some areas exposed. This will help create a nice texture as it bakes. Sprinkle the top with brown sugar to add sweetness and ensure a lovely crust.

Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes. The cobbler is done when the topping turns golden brown and juices bubble around the edges.

Serve: Once baked, let the cobbler cool for about 10-15 minutes before serving. Enjoy it warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream for an enhanced treat.
