4 slices of rustic baguette or sourdough bread

1 cup fresh ricotta cheese

2 ripe peaches, pitted and thinly sliced

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon fresh lemon juice

Fresh basil leaves, for garnish

Sea salt and freshly cracked black pepper, to taste

Optional: Balsamic glaze for drizzling

Brush both sides of each slice with olive oil and lightly sprinkle with sea salt. Place the baking sheet in the oven and toast the bread for 8-10 minutes, flipping the slices halfway through, until they are golden brown and have a crisp texture.

    Mix the Ricotta: In a medium-sized mixing bowl, combine the fresh ricotta cheese, honey, and fresh lemon juice. Season with a pinch of sea salt and freshly cracked black pepper.
