Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted and cooled slightly

2 large eggs

1 teaspoon pure vanilla extract

½ cup buttermilk (or mix ½ cup milk with 1 teaspoon lemon juice)

2 cups fresh peaches, diced (approximately 2 medium peaches)

½ cup walnuts or pecans, chopped (optional)

1 tablespoon turbinado sugar for topping

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it with cooking spray to ensure easy release.

Mix Dry Ingredients: In a spacious mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Use a whisk to blend these dry ingredients together until they are well combined and free of lumps.

Prepare Wet Ingredients: In a separate bowl, whisk together the slightly cooled melted butter, eggs, vanilla extract, and buttermilk. Whisk until the mixture is smooth and homogenous.

Combine Mixtures: Pour the prepared wet ingredients into the bowl containing the dry ingredients. Using a spatula, gently stir the mixture until just barely combined. Be cautious not to overmix; the batter should be slightly lumpy yet fully incorporated.

Fold in Peaches and Nuts: Carefully fold in the diced peaches and chopped nuts (if using), ensuring they are evenly distributed throughout the batter while being gentle to maintain the fluffiness.

Fill Muffin Tin: Using a cookie scoop or a spoon, distribute the batter evenly into the muffin tin, filling each cup about ¾ full. For a delicious crunch, sprinkle a small amount of turbinado sugar on top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes. The muffins are done when they are golden brown and a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffin tin from the oven and allow the muffins to cool in the tin for around 5 minutes. Then, gently transfer them to a wire rack to cool completely.

Serve: These delightful peach muffins are best enjoyed warm. They can also be stored in an airtight container for up to one week, making them a perfect grab-and-go breakfast or a sweet snack for any time of day!
