4 medium zucchinis, spiralized into noodles

1 cup ricotta cheese

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese, divided

2 cups marinara sauce

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Olive oil, for drizzling

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Zucchini Noodles: Place the spiralized zucchini noodles in a colander and generously sprinkle them with salt. Allow the noodles to rest for 15-20 minutes to draw out excess moisture. After resting, gently pat the noodles dry with paper towels to remove any remaining moisture.

      Make the Cheese Filling: In a large mixing bowl, combine ricotta cheese, ½ cup of grated Parmesan cheese, ½ cup of shredded mozzarella cheese, minced garlic, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste. Mix thoroughly until everything is creamy and well combined.

        Assemble the Layers: In a 9x13 inch baking dish, start by evenly spreading 1 cup of marinara sauce on the bottom. Layer half of the zucchini noodles on top of the sauce, followed by half of the cheese mixture. Repeat this layering process with the remaining zucchini noodles and cheese mixture. Finish by pouring the remaining marinara sauce over the top layer.

          Add the Cheesy Topping: Sprinkle the remaining ½ cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese evenly over the final layer to create a luscious cheesy crust.
