Ingredients

14 oz firm tofu, pressed and cut into 1-inch cubes

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup broccoli florets, washed

1 cup sugar snap peas, trimmed

3 green onions, chopped (both white and green parts separate)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup fresh orange juice (about 1 large orange)

Zest of 1 large orange

2 tablespoons soy sauce (or tamari for gluten-free option)

2 tablespoons maple syrup or honey

1 tablespoon cornstarch mixed with 2 tablespoons water to create a slurry

Salt and pepper to taste

Sesame seeds for garnish

Instructions

Press the Tofu: Start by pressing the cubed tofu. Place it between layers of paper towels or use a clean kitchen towel. Set a heavy object (like a heavy pan) on top and let it sit for 15-20 minutes. This process removes excess moisture, allowing the tofu to absorb flavors better and achieve a crispier texture when cooked.

Prepare the Orange Glaze: In a small mixing bowl, combine the fresh orange juice, orange zest, soy sauce, maple syrup, and a pinch of salt and pepper. Whisk well until the ingredients are thoroughly mixed. Set this flavorful glaze aside for later use.

Sauté the Tofu: In a large nonstick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is hot, add the cubed tofu. Cook for about 8-10 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides. Carefully remove the tofu from the skillet and transfer it to a plate. Set aside.

Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. After the oil heats up, sauté the minced garlic and grated ginger for about 30 seconds until fragrant. Next, add the sliced red and yellow bell peppers, broccoli florets, and sugar snap peas. Stir-fry for 5-7 minutes until the vegetables are vibrant in color and tender-crisp.

Combine Tofu and Glaze: Return the crispy tofu to the skillet with the sautéed vegetables. Drizzle the prepared orange glaze over the tofu and vegetables. Gently stir everything together to ensure an even coating of the glaze on all ingredients.

Thicken the Sauce: Pour the cornstarch slurry into the skillet while stirring continuously. Keep stirring for about 1-2 minutes until the sauce thickens and begins to cling to the tofu and vegetables, creating a beautiful glossy finish.

Final Touches: Remove the skillet from heat. Toss in the chopped white parts of the green onions and sprinkle everything with sesame seeds. Taste the stir-fry and adjust the seasoning with more salt and pepper if necessary.

Serve: Serve the stir-fry hot over a bed of fluffy cooked rice or your choice of noodles for a satisfying meal. Garnish with the remaining green onion tops for color and an extra burst of flavor. Enjoy this colorful and zesty Orange Glazed Tofu Stir-Fry!
