Ingredients

8 oz elbow macaroni

2 cups fresh or canned peaches (sliced, drained if using canned)

2 cups shredded sharp cheddar cheese

1 cup whole milk

1/2 cup heavy cream

1/2 cup grated parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or thyme for garnish (optional)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the garlic powder and onion powder. Stir continuously for about 1 minute until the spices become fragrant, infusing the oil with flavor.

Cook Pasta: Add the elbow macaroni to the pot along with 2 cups of water. Increase the heat to bring the mixture to a rolling boil. Once boiling, reduce the heat slightly and cook the macaroni for about 7-8 minutes, stirring occasionally, until al dente. Most of the water should be absorbed, creating a sauce-like consistency.

Add Peaches and Creams: Gently fold in the sliced peaches, then pour in the whole milk and heavy cream. Maintain medium heat and stir frequently for about 3-4 minutes, allowing the mixture to become creamy and well-combined.

Incorporate Cheese: Gradually add the shredded sharp cheddar and grated parmesan cheese to the pot. Stir continuously until the cheeses melt into the pasta, which should take about 2-3 minutes. Ensure everything is fully mixed and creamy.

Season and Serve: Season your dish with smoked paprika, salt, and pepper to taste. Mix well until the seasoning is evenly distributed throughout the dish. Remove the pot from heat and let it sit for a couple of minutes to thicken slightly.

Garnish and Enjoy: Serve the Peach Mac and Cheese hot, garnished with fresh basil or thyme if desired for an aromatic touch. Dive into this creamy, dreamy comfort food!
