Ingredients

12 oz (340g) pasta (linguine or fettuccine are ideal)

4 large yellow onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth (or beef broth for a richer flavor)

1 tablespoon balsamic vinegar

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon thyme (dried or fresh)

1 teaspoon sugar (to help caramelize the onions)

1 cup grated Gruyère cheese (or Swiss cheese)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Caramelize the Onions: In a large pot or deep skillet, combine the olive oil and butter over medium heat. Once melted, add the sliced onions, along with a sprinkle of salt and sugar to promote caramelization. Stir occasionally and allow the onions to cook gently for approximately 15-20 minutes, or until they turn a rich, golden brown, achieving a sweet caramelized flavor.

Add Garlic and Herbs: Once the onions are beautifully caramelized, add the minced garlic and thyme to the pot. Sauté for an additional 1-2 minutes, stirring until the garlic becomes aromatic without burning.

Deglaze the Pot: If you choose to include it, pour in the white wine to deglaze the pot. Use a wooden spoon to scrape up any flavorful browned bits that may have stuck to the bottom. Allow the wine to simmer for about 3-4 minutes, reducing slightly before moving on.

Add Remaining Ingredients: Stir in the vegetable (or beef) broth and the balsamic vinegar. Then, add the uncooked pasta to the pot. Increase the heat to bring the mixture to a boil, then reduce to a simmer. Cover the pot and let it cook for about 10-12 minutes, stirring occasionally, until the pasta reaches al dente and the liquid is mostly absorbed.

Incorporate Cheeses: Once cooked, remove the pot from heat. Stir in the grated Gruyère and Parmesan cheeses until they melt and create a creamy texture. Adjust the seasoning with salt and pepper to your taste.

Serve: Divide the pasta into serving bowls. Garnish with freshly chopped parsley and sprinkle additional cheese on top if desired. Dive into this delicious, comforting one-pot delight!

              Prep Time: 10 minutes | Total Time: 40 minutes | Servings: 4-6

Presentation Tips: For added elegance, serve the pasta in a deep dish and garnish each plate with a light drizzle of olive oil and a few thyme leaves for color. Enjoy!
