Ingredients

4 salmon fillets (6 oz each)

1 bunch asparagus, trimmed

2 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper to taste

Lemon slices, for garnish

Fresh parsley, finely chopped, for garnish

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature by the time you’re ready to bake.

Prepare the Marinade: In a small mixing bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, and a pinch of salt and pepper. Mix until all ingredients are fully combined, creating a fragrant marinade.

Marinate Salmon: Place the salmon fillets in a shallow dish or a large zip-top bag. Pour half of the marinade over the salmon, ensuring each fillet is evenly coated on all sides. Allow the salmon to marinate for about 15 minutes while you prepare the asparagus.

Prep the Asparagus: On a large, rimmed baking sheet, arrange the trimmed asparagus in a single layer. Drizzle the remaining marinade over the asparagus, then sprinkle with salt and pepper. Toss the asparagus gently to ensure they are evenly coated with the marinade.

Add Salmon to the Sheet: After marinating, carefully place the salmon fillets skin-side down on the same baking sheet alongside the asparagus. For an added burst of flavor, top each salmon fillet with a lemon slice.

Bake Everything Together: Slide the baking sheet into the preheated oven. Bake for 12-15 minutes, or until the salmon is cooked through, flakes easily with a fork, and the asparagus is tender yet bright green.

Garnish and Serve: Once cooked, remove the baking sheet from the oven. Garnish your dish with freshly chopped parsley for a pop of color and flavor. Serve warm and enjoy this lively one-pan meal, perfect on its own or paired with your favorite side!
