Ingredients

4 salmon fillets (6 oz each)

1 lb asparagus, trimmed

4 tablespoons extra virgin olive oil

3 tablespoons freshly squeezed lemon juice (about 1 large lemon)

Zest of 1 lemon

2 cloves garlic, finely minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

Salt and freshly ground black pepper to taste

Lemon slices, for garnish

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for cooking.

Prepare the Marinade: In a small mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, thyme leaves, and a pinch of salt and pepper. Whisk together until well blended.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable zip-top bag. Pour half of the marinade over the fish, making sure that each fillet is well coated. Allow the salmon to marinate for about 15 minutes to absorb the flavors.

Arrange the Asparagus: On a large baking sheet, lay out the trimmed asparagus in a single layer. Drizzle the remaining marinade over the asparagus and toss to coat. Sprinkle with a little more salt and pepper for seasoning.

Add the Salmon to the Sheet: After marinating, take the salmon fillets out of the dish or bag and place them skin-side down on the baking sheet alongside the asparagus to create a beautiful arrangement.

Bake in the Oven: Carefully transfer the baking sheet to the preheated oven. Bake for approximately 12-15 minutes, or until the salmon is fully cooked through and flakes easily when tested with a fork. The asparagus should be tender while retaining a vibrant green color.

Garnish for Presentation: Once cooked, remove the baking sheet from the oven. Garnish the dish with freshly chopped parsley and add lemon slices on top for an extra pop of color and zest.

Serve and Enjoy: Serve the dish hot, allowing your guests (or yourself!) to savor the delightful combination of flavors from the herb-infused salmon and tender asparagus, all highlighted by the refreshing taste of lemon.
