Ingredients

1 lb (450g) boneless skinless chicken breasts, cut into strips

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 large yellow onion, sliced into half-moons

Juice of 1 fresh lime

Fresh cilantro, chopped (for garnish)

Warm tortillas, for serving

Optional toppings: sour cream, guacamole, fresh salsa, shredded cheese

Instructions

Marinate the Chicken: In a mixing bowl, combine the chicken strips with olive oil, chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss well to ensure the chicken is evenly coated with the spices. Cover the bowl and let the mixture marinate for at least 15 minutes, allowing the chicken to absorb the flavors.

Cook the Chicken: Heat a large skillet over medium-high heat until hot. Once the skillet is heated, add the marinated chicken strips in a single layer. Sear the chicken for about 5 minutes, turning occasionally to ensure even cooking, until the chicken is browned and cooked through. After cooking, transfer the chicken to a plate and set aside.

Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers along with the sliced yellow onion. Sauté the vegetables for approximately 5-7 minutes, stirring frequently, until they become soft and slightly caramelized.

Combine and Season: Return the cooked chicken to the skillet with the sautéed peppers and onions. Squeeze the juice of one fresh lime over the mixture and stir thoroughly to combine everything. Allow it to cook for an additional 2-3 minutes so the flavors meld together beautifully.

Garnish and Serve: Once cooked, remove the skillet from heat. Garnish the fajita mixture with chopped fresh cilantro. Serve immediately with warm tortillas and an array of optional toppings such as sour cream, guacamole, fresh salsa, or shredded cheese for guests to enjoy.
