No-Bake Trail Mix Energy Bars

Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or nut butter of your choice)

1/4 cup honey (use maple syrup for a vegan version)

1/2 cup mixed nuts (such as almonds, walnuts, and pecans), chopped

1/2 cup dried fruits (like raisins, cranberries, or chopped apricots)

1/4 cup mini chocolate chips (or carob chips for a healthier alternative)

1/4 teaspoon sea salt

1/2 teaspoon ground cinnamon (optional, for added warmth)

Instructions
 

Prepare the Pan: Begin by lining an 8x8 inch square baking dish with parchment paper. Make sure to leave some overhanging edges to facilitate easy lifting and removal of the bars later on.

    Mix the Wet Ingredients: In a large mixing bowl, combine the almond butter and honey (or maple syrup). Stir continuously until the mixture is well blended and smooth. If your nut butter appears too thick, you can microwave it for about 15-20 seconds to soften it slightly, making it easier to mix.

      Combine All Ingredients: To the bowl with the wet mixture, add the rolled oats, chopped mixed nuts, chopped dried fruits, sea salt, ground cinnamon (if you're using it), and mini chocolate chips. Stir well until all ingredients are fully coated in the almond butter blend.

        Press the Mixture into the Pan: Transfer the energy bar mixture into the prepared baking dish. Use a spatula or your hands (dampening them slightly can help prevent sticking) to press down on the mixture firmly and evenly. The more compact you pack it, the firmer the finished bars will be!

          Chill the Bars: Cover the baking dish with plastic wrap or aluminum foil and place it in the refrigerator. Let the mixture chill for at least 1-2 hours, or until it becomes firm and sets properly.
