Ingredients

For the Carrot Cake:

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup vegetable oil

1 cup granulated sugar

1 cup packed brown sugar

4 large eggs

2 teaspoons pure vanilla extract

3 cups grated carrots (approximately 5-6 medium carrots)

1 cup crushed pineapple, well-drained

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or currants (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened to room temperature

1/2 cup unsalted butter, softened to room temperature

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (or more, as needed for desired consistency)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them. Alternatively, line the pans with parchment paper for easier removal.

Mix Dry Ingredients: In a medium mixing bowl, thoroughly whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until evenly combined. Set this mixture aside.

Combine Wet Ingredients: In a large mixing bowl, pour in the vegetable oil, granulated sugar, and packed brown sugar. Using an electric mixer, beat the mixture on medium speed for about 2 minutes until well blended. Gradually add the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.

Incorporate Dry Ingredients: Slowly add the dry ingredients to the wet mixture, mixing on low speed just until everything is combined. Take care not to overmix the batter.

Add Carrots and Mix-ins: Gently fold in the grated carrots, well-drained crushed pineapple, and any optional chopped nuts or raisins. Do this with a spatula, being careful to keep the batter light and fluffy.

Bake the Cake: Evenly divide the cake batter between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes: Once baked, let the cakes cool in their pans for about 10 minutes. Then, carefully remove them from the pans and transfer to a wire rack to cool completely.

Prepare the Cream Cheese Frosting: In a mixing bowl, combine the softened cream cheese and butter. Beat together until the mixture is smooth and creamy. Gradually add the powdered sugar, vanilla extract, and milk, continuing to mix until you achieve a spreadable consistency.

Frost the Cake: When the cakes are completely cool, place one layer on a serving platter. Generously spread cream cheese frosting over the top of this layer. Carefully stack the second cake layer on top and frost both the top and sides of the entire cake.

Serving: For an extra touch, sprinkle additional chopped nuts or a dash of cinnamon on top. Slice the cake, serve, and enjoy every bite of this moist and delectable carrot cake!
