1 large tortilla (whole wheat or white)

1/2 cup pizza sauce (or marinara sauce)

1/2 cup shredded mozzarella cheese

1/4 cup diced bell peppers (choose a mix of red, yellow, and green for color)

1/4 cup finely chopped fresh spinach

1/4 cup sliced black olives

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning (dried)

1/2 teaspoon garlic powder

Olive oil spray (or any cooking spray)

Optional: crushed red pepper flakes, to taste, for a spicy kick

Instructions
 

Prep the Tortilla: Place the tortilla on a clean, flat surface. Lightly mist one side with olive oil spray to enhance crispiness during baking.

    Spread the Sauce: Using a spoon or spatula, spread the pizza sauce evenly over the ungreased side of the tortilla. Leave a half-inch border around the edges to prevent spillage when rolling.

      Layer the Filling: Evenly sprinkle the shredded mozzarella cheese over the sauce. Next, evenly distribute the diced bell peppers, finely chopped spinach, and sliced black olives on top of the cheese.

        Season it Up: Sprinkle the grated Parmesan cheese over the veggie mixture. Add the Italian seasoning and garlic powder, ensuring an even coating. If desired, sprinkle crushed red pepper flakes for an added heat.

          Roll it Up: Starting from one edge, carefully and tightly roll the tortilla into a log shape. Once rolled, apply a gentle squeeze to help the filling stay contained.

            Slice the Rolls: With a sharp knife, slice the rolled tortilla into bite-sized pieces, approximately 1 to 1.5 inches wide for perfect portioning.

              Preheat and Bake: Preheat your oven to 375°F (190°C). Arrange the roll-ups on a baking sheet lined with parchment paper, placing them cut side up. Lightly spray the tops with olive oil.

                Bake: Place the baking sheet in the preheated oven and bake for around 12-15 minutes, or until the edges become golden and crispy, indicating they are ready.
