Ingredients

1 can (15 oz) sweet corn, drained and rinsed

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 ripe avocado, diced

1 small red onion, finely chopped

1 small jalapeño, finely diced (optional for spice)

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and black pepper, to taste

1 bag (10 oz) tortilla chips

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions

Prepare the Filling: In a medium mixing bowl, combine the drained and rinsed sweet corn, black beans, halved cherry tomatoes, finely chopped red onion, and jalapeño (if using). Add the ground cumin, chili powder, and season with salt and black pepper. Mix all the ingredients thoroughly until well blended. Set aside the filling mix.

Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it's ready for baking once you assemble the nacho bowls.

Assemble the Bowls: On a baking sheet or in individual small bowls, arrange the tortilla chips in an upright position to create a scooped shape. This will form the base of your mini nacho bowls.

Top with Filling: Using a spoon, generously add the sweet corn and black bean mixture over the tortilla chips, ensuring that each chip is topped with a good amount of the filling mixture.

Add Cheese: Evenly sprinkle the shredded cheddar cheese over the filled tortilla chips, covering them well for maximum cheesiness.

Bake: Place the assembled nacho bowls in the preheated oven and bake for approximately 10-12 minutes. Remove them once the cheese has fully melted and is bubbly.

Add Fresh Toppings: Carefully take the nacho bowls out of the oven. Top each bowl with diced avocado and a generous sprinkle of fresh cilantro leaves for added flavor and color.

Serve with Lime: Serve the mini nacho bowls immediately while they're hot, accompanied by lime wedges on the side for an extra burst of zesty flavor.
