12 large cremini or white mushrooms, thoroughly cleaned and stems removed

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup cooked Italian sausage, crumbled (substitute with pepperoni if preferred)

1/4 cup bell pepper, finely diced (choose from red, green, or yellow)

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Fresh basil leaves, for garnish

1 tablespoon olive oil

Salt and pepper, to taste

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking.

    Prepare the Mushrooms: Using a damp cloth, carefully clean the mushrooms. Remove the stems and set them aside for later use. Arrange the mushroom caps, opening side facing up, on a baking sheet that has been lightly greased.

      Cook the Filling: In a skillet set over medium heat, warm the olive oil. Once hot, add the minced garlic, chopped onions, and diced bell peppers. Sauté the mixture for 3–4 minutes or until the onions become translucent. Add the crumbled Italian sausage (or pepperoni) and cook for an additional 2 minutes, allowing the flavors to meld together.

        Add Marinara and Seasoning: Pour in the marinara sauce, followed by the Italian seasoning and red pepper flakes (if using). Allow the mixture to simmer for about 5 minutes to enhance the flavors. Taste and season with salt and pepper as desired.
