Mini Pepperoni Pasta Pie Bites

2 cups cavatappi pasta (or any small pasta of your choice)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup marinara sauce (plus extra for serving)

1/2 cup sliced pepperoni

1 large egg

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes (optional - for a spicy kick)

Salt and pepper to taste

Olive oil (for greasing the muffin tin)

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). While it heats, drizzle some olive oil into a 12-cup muffin tin, using a brush or paper towel to spread it evenly across the cups.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook for approximately 7-8 minutes, or until al dente (firm to the bite). Drain the pasta and set it aside to cool slightly.

      Prepare the Cheese Mixture: In a spacious bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, and the egg. Sprinkle in the dried oregano, garlic powder, crushed red pepper flakes (if using), along with a pinch of salt and pepper. Mix everything together until the mixture is smooth and well-combined.

        Incorporate the Pasta: Gradually add the cooked pasta to the cheese mixture. Also, include half of the sliced pepperoni. Stir gently until the pasta is generously coated in the creamy cheese blend.

          Fill the Muffin Tin: Use a spoon to fill each muffin cup in the prepared tin with the pasta mixture, packing it down lightly, ensuring each cup is filled about 3/4 of the way. Top each filled cup with a generous spoonful of marinara sauce and add a few extra slices of pepperoni on top.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and the cheese is bubbling enticingly.

              Cool and Serve: Once baked, remove the muffin tin from the oven and allow the bites to cool for about 5 minutes. Carefully slide a knife around the edges of each pasta bite to loosen them, then gently lift them out of the tin. Serve warm with additional marinara sauce on the side for dipping, and if you like, garnish with fresh basil leaves for a burst of color and flavor.
