1 cup Hatch green chilies, diced (fresh or roasted)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

1 cup shredded cheddar cheese

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup sour cream (optional)

Fresh cilantro, chopped (for garnish)

Prepare the Filling: In a large skillet over medium heat, add the ground beef. Cook for approximately 5-7 minutes, breaking it apart with a spatula until it's fully browned. Drain excess fat to keep the filling light and flavorful.
