Ingredients

8 slices of your choice of bread (sourdough, whole grain, or classic white)

8 slices of cheddar cheese (or your favorite melting cheese)

8 cherry or grape tomatoes

4 tablespoons unsalted butter, softened to room temperature

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

Skewers (use wooden or metal)

Instructions

Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill. Meanwhile, preheat your grill or grill pan over medium heat for optimal cooking.

Assemble the Sandwiches: For each mini sandwich, take 2 slices of bread and place a slice of cheese between them. Repeat this process to create a total of 4 mini grilled cheese sandwiches.

Season the Butter: In a small mixing bowl, combine the softened butter, garlic powder, dried oregano, salt, and pepper. Stir until all ingredients are thoroughly incorporated into a smooth mixture.

Butter the Bread: Generously spread the seasoned butter mixture on the outer sides of each mini grilled cheese sandwich, ensuring even coverage for perfect grilling.

Skewer it Up: Cut each sandwich into quarters, or triangles if you prefer a fun twist. Thread one piece of grilled cheese onto a skewer, followed by a cherry tomato. Continue alternating between the sandwich pieces and tomatoes until the skewer is filled, leaving a little space at the ends for easy handling.

Grill the Skewers: Place the assembled skewers on the preheated grill. Cook for approximately 2-3 minutes on each side, or until the bread reaches a golden brown color and the cheese melts beautifully.

Serve: Once grilled, remove the skewers from the grill and allow them to cool for a minute. Serve warm, ideally with a side of rich tomato soup for dipping or enjoy these delightful bites on their own.
