1 cup cooked chili (choose between chili with beans or without)

8 small flour tortillas (or substitute with corn tortillas, if preferred)

1 cup shredded sharp cheddar cheese

1/4 cup finely chopped red onion

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the cooked chili, shredded cheddar cheese, diced bell peppers, chopped red onion, ground cumin, garlic powder, smoked paprika, and a sprinkle of salt and pepper. Mix thoroughly until all ingredients are well combined. Taste the mixture and adjust the seasonings according to your preferences.

    Assemble the Quesadillas: Take one tortilla and place approximately 2 tablespoons of the prepared filling on one half. Gently fold the tortilla over to create a half-moon shape. Repeat this assembly process for the remaining tortillas and filling.

      Cook the Quesadillas: Heat a large skillet over medium heat. Lightly coat the bottom of the skillet with olive oil or cooking spray. Carefully place a few folded quesadillas into the skillet, making sure not to overcrowd the pan. Cook for about 3-4 minutes on one side, or until they are golden brown and crispy.
