1 block (14 oz) firm tofu, drained and pressed

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup lettuce, shredded

1 cup cherry tomatoes, halved

1/2 cup shredded carrots

1/2 cup blue cheese or vegan cheese crumbles (optional)

Fresh cilantro or parsley, for garnish

Prepare the Tofu: Begin by pressing the tofu to eliminate excess moisture, which helps to achieve a crispier texture. Cut the pressed tofu into bite-sized cubes, roughly ½ inch in size, ensuring even cooking.

    Marinate: In a mixing bowl, combine the tofu cubes with olive oil, buffalo sauce, garlic powder, onion powder, and a sprinkle of salt and pepper. Toss well to coat all the tofu pieces in the marinade. Allow the tofu to marinate for a minimum of 15 minutes to absorb all the flavors.
