Ingredients

4 medium zucchinis

1 cup cooked chicken, shredded

½ cup BBQ sauce (your favorite brand)

½ cup shredded cheese (cheddar or mozzarella)

¼ cup red onion, finely diced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

Prepare the Zucchini: Rinse the zucchinis under cool water and slice them in half lengthwise. Employ a spoon to carefully scoop out the inside flesh of each half, leaving about ¼ inch of the flesh intact to create a sturdy cup. Set aside the scooped zucchini flesh for use in the filling.

Cook the Filling: In a medium skillet, heat the olive oil over medium heat. Add the reserved zucchini flesh and diced red onion. Sauté for approximately 3-4 minutes, stirring frequently, until the onions are translucent and the zucchini has softened slightly.

Combine Ingredients: In a large mixing bowl, combine the sautéed mixture of zucchini and onion with the shredded chicken, BBQ sauce, garlic powder, smoked paprika, salt, and black pepper. Mix thoroughly until all ingredients are evenly distributed.

Fill the Zucchini Cups: Arrange the zucchini halves cut-side up on a baking sheet lined with parchment paper for easy cleanup. Spoon the BBQ chicken mixture generously into each hollowed zucchini cup, packing them well.

Add Cheese: Sprinkle a generous amount of shredded cheese across the top of each filled zucchini cup, ensuring that each one is adequately covered for a delicious, melty topping.

Bake: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes. Keep an eye on them until the zucchini becomes tender and the cheese is melted and bubbly, providing a beautiful golden top.

Garnish and Serve: Once baked, remove the zucchini cups from the oven and let them cool for a few minutes. For a fresh touch, garnish with freshly chopped parsley before serving.
