8 small corn tortillas

6 large eggs

6 strips of bacon, diced

1/2 cup shredded cheese (choose between cheddar or pepper jack)

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 avocado, sliced

Fresh cilantro, roughly chopped, for garnish

Hot sauce or salsa, for serving (optional)

Cook the Bacon: In a large skillet, over medium heat, add the diced bacon. Sauté until the bacon is crispy and golden brown, approximately 5-7 minutes. Once cooked, use a slotted spoon to transfer the bacon onto a plate lined with paper towels, allowing any excess fat to drain while leaving the rendered fat in the skillet.

    Scramble the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. In the skillet with the reserved bacon fat, add the olive oil and heat over medium-low heat. Pour the egg mixture into the skillet and gently stir with a spatula. Cook the eggs until they are just set but still soft and creamy, typically about 3-4 minutes. Carefully fold in the crispy bacon and half of the shredded cheese, mixing until evenly distributed.

      Warm the Tortillas: As the eggs are cooking, wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds, or until warm and flexible. Alternatively, you can warm them in a dry skillet for approximately 30 seconds on each side until heated through.

        Assemble the Tacos: Take a small scoop of the scrambled egg and bacon mixture and place it onto each tortilla. Add a sprinkle of the remaining cheese on top, followed by a slice of avocado.

          Garnish and Serve: Finish by sprinkling fresh cilantro over the assembled tacos. For an added kick, serve with hot sauce or salsa on the side for dipping.
